Mountain Recipes

This is from Taste of Home's website and it won their blue ribbon. I just made it and it is scrumptious.

2 cans chicken broth
2 celery ribs, chopped
1 med. head cabbage, shredded
1 med. onion, chopped
1 med. carrot, chopped

Bring this to a boil, reduce heat, cover and simmer til the veggies are tender.

Meanwhile:

1/4 c. butter
3 T. flour
1 t. salt
1/4 t. pepper
2 c. half-and-half
1 c. milk
2 c. diced ham
1/2 t. dried thyme

Melt butter in a saucepan, add flour, salt and pepper. Cook and stir to form a paste. Combine cream and milk and gradually add to flour mixture, stirring constantlly. Cook and stir until thinkened, continue cooking 1 min. longer. Gradually stir into veggie mixture. Add ham and thyme and heat through. Garnish w/ parsley, if desired. Yield 8-10 serving.

I didn't have half-and-half but I did have heavy cream (whipping cream) so I used 2c. milk and 1 c. whipping cream. It is really good and low cal--not.

Oh I wish I had all of the ingrediants right now! I would make it! Sounds really good!
