Corn Spoon Bread

Prep Time: 10 min Inactive Prep Time: -- Cook Time: 35 min Easy Serves: 4 servings
Ingredients
1 cup milk
1/3 cup yellow cornmeal
1/2 teaspoon kosher salt
1 cup shredded Cheddar, divided
1 cup canned corn kernels, drained
1/2 cup chopped green onions
2 large eggs, lightly beaten
2 tablespoons butter, cut in small pieces
1/8 teaspoon ground red pepper flakes
Directions
Preheat the oven to 400 degrees F.
In a medium saucepan, whisk together the milk, cornmeal, and salt. Cook over medium-high heat, stirring constantly, until mixture has thickened, about 5 minutes. Stir in 1/2 cup of the cheese, the corn, and the green onion. Temper the eggs by slowly whisking some of the hot milk mixture into the beaten eggs. Stir the tempered eggs into the milk mixture. Pour the mixture into a 1-quart baking dish. Top with pieces of butter and sprinkle with the red pepper flakes and remaining 1/2 cup of cheese. Bake for 25 to 30 minutes or until center is set and cheese is lightly browned. Remove from the oven and serve immediately.

Of course, I did botch a batch of packaged Marie Calendar corn muffin mix a few weeks ago, so no promises!

I've served this slightly sweetened corn bread with BBQ chili -- which is here:

1 16 oz. can of creamed corn
1/2 c. milk or buttermilk
1 c. Bisquick
2 eggs, beaten
4-8 oz. Monterey Jack cheese, shredded (for extra-spicy, use pepper jack cheese)
Mix everything together except the cheese. Pour half the mixture into a greased 9" baking dish. Cover with half of the cheese. Pour rest of corn mixture over cheese and sprinkle on the remaining cheese. Bake 30 minutes at 400 degrees.

Corn Casserole sounds really good. I will try that soon. I don't cook as much as I used to but I love corn bread and especially with cheese. Sounds like these two would go good together. With a little chili, of course!

The corn casserole is really, really, really good. I pour my easy chili over it. Hubby ate all of his! He hasn't been eating much lately. He loved it!
